Rainbow Veggie Bites

I was so excited to try making these little veggie bites! And boy did they not disappoint! These were delicious, light and easy to make.

YOU WILL NEED

Veggies, chopped small (any variety… great time to clean out your fridge drawers!). I used a few different colors of bell pepper, red onion, cauliflower, broccoli, carrot, celery and spinach.

Toasted mini bagels, crackers, or rice cakes for a gluten free option

2 ounces softened cream cheese, separated

1 tsp italian seasoning

LET’S GET STARTED!

First begin by mixing 1 tsp italian seasoning with 1 ounce of cream cheese. I used this on the bagels.

Next, spread the desired cream cheese onto the bagel, cracker or rice cake. Our rice cakes were ranch flavored so we went with plain cream cheese. The bagels were DELICIOUS with the Italian seasoned cream cheese! My kids abandoned the nice spatula in favor of a spoon for spreading. Nice!

Next add whatever chopped up veggies you have or want on top! I encouraged my kids to pick what colors they liked.

REALITY CHECK

Did my kids eat these?? No, they did not. However my daughter sampled a few spinach leaves while she was making them, and my son tried bagels with cream cheese for the first time and loved it. I however loved these little snacks and had them again the next day for a little snack! I also used the leftover chopped veggies with some shredded cabbage in a homemade coleslaw we had for dinner. It turned out amazing! Here’s the recipe I used!
