Mixed Berry & Apple Popsicle

Ingredients

  • 2 medium apples
  • 1 lb mixed berries, fresh or frozen
  • 2 Tbsp water
  • 1/3 cup sugar

Instructions

  1. Peel, core and dice apples. Place in a medium saucepan with berries and water.

  2. Heat gently until berries release some juice, then bring to a boil and simmer for 5-7 minutes, until apples are soft.

  3. Remove from heat. Stir in sugar until dissolved. Taste and add more sugar if too sharp (depending on ripeness of the berries).

  4. Puree fruit in a blender or food processor. Let it cool to room temperature, then pour into popsicle molds and freeze overnight.
