Hearty Healthy Pancakes

Servings 12 pancakes

Ingredients

  • 2 eggs
  • 1 1/2 cups whole wheat flour
  • 1/4 cup wheat bran
  • 1/4 cup quick oats
  • 1 3/4 cups milk
  • 1/4 cup canola oil
  • 2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Heat a nonstick skillet to 300F.

  2. Crack 2 eggs into a medium bowl. Beat until fluffy.

  3. Add the rest of the ingredients. Stir until well incorporated.

  4. Pour in 1/4 cup scoops onto the hot skillet. Flip when the top is bubbly and the edges are dry. Cook for 1 minute on the other side.
