Mango Salsa

Ingredients

  • 1 mango, diced small
  • 1/4 onion, diced
  • 1 tomato, diced small
  • 1/4 cup fresh cilantro, chopped
  • 1 Tbsp red wine vinegar
  • 1 lime, juiced
  • 1 tsp ground cumin
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper

Instructions

  1. Place all ingredients in a medium bowl. Stir to combine.

  2. Allow flavors to develop by placing in fridge for at least an hour, or overnight. Refrigerate leftovers in a covered dish. Enjoy for up to 3 days.
