Avocado Egg Salad

Ingredients

  • 1/2 avocado
  • 1 tsp lemon juice
  • 1/4 cup cucumber, diced small
  • 1 hard boiled egg, diced small
  • 1/2 green onion, diced
  • 1/8 tsp salt
  • black pepper to taste
  • 1 slice whole wheat bread, toasted
  • 1/4 cup spinach leaves

Instructions

  1. Mash 1/2 an avocado. Mix with lemon juice.

  2. Dump in diced cucumber, egg, green onion, salt and pepper. Stir to mix.

  3. Layer a few spinach leaves on top of a piece of toasted whole wheat bread. Add a scoop of the avocado mixture on top. Enjoy!
