Mash 1/2 an avocado. Mix with lemon juice.
Dump in diced cucumber, egg, green onion, salt and pepper. Stir to mix.
Layer a few spinach leaves on top of a piece of toasted whole wheat bread. Add a scoop of the avocado mixture on top. Enjoy!
