Pumpkin Bars with Cream Cheese Frosting

Ingredients

  • 4 eggs
  • 1 2/3 cups sugar
  • 1 cup canola oil
  • 1 16 oz can pumpkin puree
  • 2 cups flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt

Frosting

  • 3 ounces cream cheese (at room temperature)
  • 1/2 cup butter (at room temperature)
  • 1 tsp vanilla
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350F.

  2. In a large mixing bowl, beat together eggs, sugar, oil and pumpkin until light and fluffy.

  3. In a separate bowl mix together flour, baking powder, cinnamon, salt and soda. Add this mixture to the large bowl of liquid ingredients; mix thoroughly.

  4. Spread batter in ungreased 15x10 baking pan (jelly roll pan).

  5. Bake at 350F for 25-30 minutes until it springs back when touched.

  6. Let it cool completely, then frost and cut into bars.

Frosting

  1. Cream butter and cream cheese together with a hand mixer. Add vanilla. Slowly add powdered sugar a little at a time until smooth. Spread over cooled pumpkin bars before serving.
