Mini Ice Cream Sandwiches

Ingredients

  • 1 pint ice cream or frozen yogurt, any flavor
  • 8 cookies, any flavor
  • 1/2 cup sprinkles

Instructions

  1. Let ice cream soften at room temperature for 10 minutes.

  2. Place a cookie on the cutting board, flat side up. Spread with a scoop of ice cream.

  3. Place a second cookie on top of the ice cream scoop and gently press together.

  4. Roll edges of the cookie in the sprinkles. Place in the freezer until frozen again, at least 20 minutes.
