Cheddar, Bacon and Spinach Quiche

I make this quiche for my family for dinner at least twice a month. I have played around a lot with the ingredients such as how many eggs, how much milk (or using cream instead) until I was really happy with this combination. My toddlers absolutely love this meal. Mister four loves the crust and likes to eat that first, and little miss two is happy with the whole thing. Toddler dinner for the win. Sometimes, I make it without the bacon, and I think it’s great that way as well – but my husband is so sad when I don’t put it in! So I try to include it most nights 🙂

I make this using my favorite easy Press In the Pan Pie Crust, but you can also use a store bought pie crust or your other favorite pie crust recipe.

First you whisk the eggs with the milk and spices. Then in the pie crust, layer the cheese, bacon and spinach, and pour the egg liquid in around the ingredients. It will bake for about 45 minutes or until a knife comes out clean.

and it’s done! it’s super hot so wait a bit before serving, just let it sit for 10 minutes or so… I always precut my kids slices and put it on their plates before hand too so it’s nice and cooled off before they eat.

Cheddar, Bacon and Spinach Quiche

Ingredients

  • 1 Press in Pan Pastry or your favorite pie crust
  • 5 large eggs
  • 1 cup whole milk
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp cayenne pepper
  • 1/4 cup frozen chopped spinach, thawed, squeeze out excess liquid
  • 1/4 cup bacon bits
  • 1 cup shredded cheddar cheese

Instructions

  1. If using Press in Pan pastry, preheat oven to 425F, make the pastry, bake for 10 minutes then set aside.

  2. Crack eggs into a medium bowl. Add milk, salt, pepper and cayenne, whisk until all eggs are broken.

  3. Sprinkle cheese, bacon and spinach into pie crust.

  4. Reduce oven temperature to 325F. Bake for 45-50 minutes until knife inserted in center comes out clean. Let stand 10 minutes or more before serving.
