Berry-Melon Breakfast Sundae

This “breakfast sundae” was delicious and really fun to make with my toddlers! My favorite moment from the cooking process was when little miss two was scooping out the honeydew with the ice cream scoop, and as soon as she got it the melon went flying across the room! It happened again when mister four scooped as well – flinging melon onto the floor! I guess they had really good leverage haha.

The combination of strawberries blended in with the yogurt was yummy and refreshing. My son chose to put granola and 1 blueberry, and omit the strawberries and bananas – while my daughter chose to dump in ALL the granola and use up ALL the blueberries while also skipping over the bananas and strawberries. I on the other hand put everything on my sundae and ate it up. Putting honeydew into this “sundae” made it so light and refreshing, it was a first for me and I love it! Toddler made breakfast for the win!

Melon-Berry Breakfast Sundae

Ingredients

  • 1.5 cups vanilla greek yogurt
  • 8 strawberries
  • 4 scoops honeydew, canteloupe or watermelon
  • 1 banana sliced
  • 1 cup blueberries
  • 1 cup granola

Instructions

ADULT STEPS

  1. Slice open melon, scoop out seeds. 

  2. Blend yogurt and strawberries in blender.

KID STEPS

  1. Pour half of yogurt sauce evenly among 4 containers.

  2. Use an ice cream scooper to dig one scoop out of the melon, add a scoop to each of the containers.

  3. Pour remaining yogurt sauce over the melon.

  4. Slice banana & strawberries into thin slices using a plastic knife.

  5. Sprinkle sundae with strawberries, blueberries, granola and bananas as desired. Enjoy!
